Auretta® from Riserva Esclusiva Auricchio is a caciotta obtained from a mix of cow and sheep’s milk (minimum 20% content). It is a soft, semi-cooked paste table cheese, with a short maturing time of 4 weeks. Auretta® is available in two formats, one of approx. 1,2 kg. and one of approx. 1,8 kg. Its taste is mild and delicate, the paste is straw-yellow colour with a light and semi-smooth rind.

Saracino® from Riserva Esclusiva Auricchio is a caciotta cheese produced from pasteurized sheep’s whole milk after a four week maturing time. The shape is cylindrical and the weight varies from 1,8 to 2 kg. Its rind is carved in basket-like stripes. The paste is compact, straw-yellow colour with quite sparse eye-holes and its taste is mild and aromatic.

Caciotta del Pirata® is entirely produced from sheep’s milk. Its weight is approx. 4 kg. It is characterized by smooth rind and a straw-yellow paste with sparse eye-holes, obtained through the so called “roman” processing, which results in a soft texture and a fresh, yet distinctive flavour. The maturing time is approx. 60 days.

Novella® con Peperoncino, from Riserva Esclusiva Auricchio is a fresh caciotta obtained from pasteurized whole sheep’s milk with red pepper addedIt matures four weeks. Its shape is cylindrical and weight varies from 1,8 to 2 kg. Its rind is carved in basket-like stripes. The paste is compact, straw-yellow colour with quite sparse and tiny eye-holes.

The fresh caciotta cheeses from Riserva Esclusiva Auricchio are ideal as table cheeses to match with crisp salads, summer recipes or grilled vegetables, but they are still excellent when added for extra flavour to fanciful starters and main courses such as omelettes and savoury pies for an easy and yet tasty dinner.
