Provolone Stravecchio is produced following an ancient dairy art, which requires a very slow maturing of more than a year in restricted premises. This Provolone is easily recognizable thanks to its dark ‘cappatura’, the ‘pelure’ with a white watermark and the white Auricchio seal, which give both distinction and authority to this true king of the table.
